1, Coconut Chicken Stew

Ingredients:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into pieces
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 1 cup sliced carrots
  • 1 cup chopped bell peppers
  • 1 cup chopped tomatoes
  • 1 cup chopped onions
  • 1 cup chopped potatoes
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 2 tablespoons vegetable oil
  • Fresh cilantro or parsley for garnish 

    Instructions: Combine all the ingredients, except for the oil and garnish, in a large pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 1 hour, until the chicken and vegetables are tender. Stir occasionally to prevent sticking. Garnish with fresh cilantro or parsley before serving.

    2, Chicken and Rice Stew

     Ingredients

      • 1 cup chopped onions
      • 1 cup chopped bell peppers
      • 1 cup chopped tomatoes
      • 1 cup frozen peas

      • 1/2 teaspoon pepper
      • 1 teaspoon paprika
      • 1 teaspoon dried oregano

        Instructions: Combine all the ingredients in a large pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes, until the chicken and rice are cooked through. Stir occasionally to prevent sticking.

        3, Lentil and Vegetable Stew

          • 1 cup dried lentils, rinsed and drained
          • add chicken or stew meat if desire, cut in chucks
          • 4 cups vegetable broth
          • 2 cups diced potatoes
          • 1 cup sliced carrots
          • 1 cup chopped onions
          • 1 cup chopped bell peppers
          • 1 cup chopped zucchini
          • 3 garlic cloves, minced
          • 1 teaspoon salt
          • 1/2 teaspoon pepper
          • 1 teaspoon curry powder
          • 1 teaspoon ground cumin

            Instructions: Combine all the ingredients in a large pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes, until the lentils and vegetables are tender. Stir occasionally to prevent sticking.

            4, Sausage and Bean Stew

             Ingredients
              • 1 pound smoked sausage, sliced
              • 4 cups chicken broth
              • 2 cans (15 oz each) white beans, drained and rinsed
              • 1 cup chopped onions
              • 1 cup chopped bell peppers
              • 1 cup chopped tomatoes
              • 3 garlic cloves, minced
              • 1 teaspoon salt
              • 1/2 teaspoon pepper
              • 1 teaspoon dried thyme
              • 1 teaspoon dried rosemary

                Instructions

                Combine all the ingredients in a large pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes, until the vegetables are tender. Stir occasionally to prevent sticking.

                5, Pork and Sweet Potato Stew

                  • 1 pound pork tenderloin, cut into cubes
                  • 4 cups chicken broth
                  • 2 cups diced sweet potatoes

                  • 1 cup chopped bell peppers
